Meatless Monday: Pumpkin Enchiladas in Mole Sauce served with Wild Rice

This is one of my (Melody) favorite recipes and I wanted to share it as part of our POSSIBLY LAST Meatless Monday. Please do RSVP if you will come, we use that to gauge how much food to make.

The unfortunate news is that if we can't get more regularity in our customer base, Palookaville will have to conserve its resources by canceling our weekly special and closing up shop early instead.
